Discusses rheology and the intrinsic link to dysphagia management. Reviews concepts of bolus flow and force with respect to individual stages of the oro-pharyngeal swallow. Basic tenants related to texture modification including stability, consistency and uniformity are provided.  Literature review explors the relationship between dysphagia in stroke patients and the development of pneumonia, delineating how methods of patient assessment impact reported pneumonia rates.
